Wow., (What's this?) I've been using the Calphalon One cookware for a few years, which is fairly expensive, on par-with Scanpan in terms of cost. Where Calphalon is not on-par is in terms of performance. This Scanpan cookware has been absolutely fantastic thus far and is the *best* nonstick cookware that I have ever used. I cook with this pan 2-4 times daily and have yet to have any issues with it. I use the 8-inch CTX fry pan mostly but plan on getting a full set of this cookware. HIGHLY recommended- the build quality is unbelievable, performance rocks and I have no doubt that I'll get many good years of use out of this cookware.
Why did I wait so long?, (What's this?) I bought the 10.25 inch fry pan to replace an All-Clad 10 inch fry pan that is loosing it's nonstick finish. I decided to take the plunge on the scan pan because I hate redundancy, finding myself fretting about what pan to buy that will really last. It says it will last a life time, well that is what I am hoping for. The pan is a little heavier than I thought it would be, but the handle is sizeable enough to hold onto without to much trouble (I am getting old). I hope this fixes my redundancy issues with a 10 inch fry pan.

Absolutely great pans...Scanpan CTX Fry Pans, I couldn't agree MORE with all the other reviewers before me. These Scan Pan CTX frypans are totally awesome. I have a huge, I mean HUGE, set of All Clad...Copper Core and also their regular stainless; I also have a pretty big herd of Lodge cast iron skillets...which have pretty good non-stick properties up to a point. I really love all of them but never would buy any (teflon) non-stick because even with All Clad, I had concerns about the safety qualities of the coating. Read about these ScanPan CTX pans at Sur La Table and bought the 10.25 inch....totally loved it so went back for the 8" for smaller omelets. The pans cook beautifully, especially things like eggs and some fish that might stick, but they also carmelize and brown other things nicely (scallopine and cutlets, etc.), which seem to be an issue with other non-stick pans. As noted elsewhere, the pans are: 1) beautiful and well made; 2) heavy, and have good heat retention and even heating properties.
The manufacturer says you can use metal utensils with these...I do, guardedly, only because it makes ME nervous. So far (about 7 months out on the larger pan...) they have been amazing and show NO signs of wear, even surviving use by my manimal (uhhh... that would be my live-with boyfriend who has his own unique cooking style that is not always easy on the cookware).
These have become my 'go to' pans so I am now buying the 12.75 SCANPAN CTX fry pan. True, they can be considered a bit pricey; although I also considered the ScanPan Professional line which is similar and less expensive without the layered stainless cladding on the exterior, I prefer the weight and clad properties of the CTX line and recommend these. Good investment.Highly recommended.
PS: These are only very occassionally on eBay; consistently the best price is here on Amazon who for me continues to be an awesome retailer.
awesome, (What's this?) This pan empresses from the time you open the box and see it wrapped in a blue velvet bag to using a pan that sits perfectly flat on the range.This will replace my cast iron pans. The base is heavy but half the weight of cast iron but preforms as well. The added blessing is that you don't need to wait for the patina to build to cook greaseless.
Makes you a really good cook., (What's this?) You will no longer pine for good reviews of the creations from your kitchen. This wonderful pan virtually eliminates all would-be disasters. No sticking, ease of use, simple, quick clean up. It is a bit heavy but that's O.K. In forty years of looking without success, I finally found a "really good" pan. I would purchase it again in a cook's minute.
Almost Perfect, (What's this?) I have been using the 8" and 10.25" pans for almost a year with an induction cooktop. I am considering the 12-3/4" one, too. They do occasionally go on sale here at Amazon for less than the usual prices. I wish they made a shallow 2-1/2 quart, 8" diameter saute pan with lid.
Other reviewers have mentioned what makes them so great, and I agree.
Worth the price, (What's this?) This is the best pan I have ever used. It heats evenly and is easy to clean.
Very nice pan, (What's this?) The CTX series Scanpan is top of the line all the way, comes with a protective cloth bag that the pan slips into for storage, a nice touch, works well, nothing sticks, but I must admit it ain't cheap!! It's big too. You can cook alot of groceries in this pan and it cleans up easily with a paper towel or soft sponge. Only time will tell how good this touted ceramic finish is, but it is serving us well thusfar.
if it lasts, the best cooking investment ever, (What's this?) A 12-inch-ish non-stick skillet is one of the most important cooking tools to me - you can fry, make sauces and stews (they don't spit in a wider pan like they do in a saucepan)and so on. I've always bought cheap ones, on the grounds that the surfaces don't last anyway and you replace them when they wear out.
I finally splurged on the Scanpan because of its ability to take higher heats, which makes sauteing much less frustrating. Being oven-safe, for frittatas and finishing under the grill, is great too. And I love it. It heats evenly, is really REALLY nonstick, gets you to a good searing temperature, and doesn't really need washing, just wiping out.
IF it lasts a couple of years I will be very, very happy and buy another one, and one for all my cooking friends. It is a quantum leap better than what I have had, and allows me to to do things I just couldn't do before. If it self-destructs under high heat one day, I will come back, update the review and trash it. But for now, BEST PAN EVER.
